I have found a way to get my kids to drink spinach! I am not kidding. One day I decided to add spinach to my smoothie and it turns out you can’t taste it. I gave it to my kids, and they actually drank it.

This smoothie is delicious…

1 banana
1.5 cups rice milk
3 heaping TBS of organic vanilla yogurt
3 cups loose leaf organic spinach
1 TBS maple syrup
1 TBS almond butter
a hand full of fresh/frozen berries

It doesn’t matter the recipe. Add spinach to any smoothie. The health benefits of spinach are numerous and its ability to help prevent disease is well known. Spinach is at the top of many super food lists. Spinach and other dark leafy greens like kale, collards, Swiss chard, turnip greens and bok choy are loaded with calcium, folic acid, vitamin K and iron. Spinach is also rich in vitamin C, fiber and carotenoids. Add its lutein and bioflavanoids and spinach is a nutritional powerhouse.

Let's face it, getting kids to eat their veggies is sometime a challange. I don't like to deceive my kids, so i never lie about what i am serving. Deceptively Delicious: Simple Secrets to Get Your Kids Eating Good Food by Jessica Seinfeld is pretty clever. She blends veggies and adds them to sauces of every meal. I let my kids taste it, and then tell them what's in it.

The mornings when I feed my kids spinach for breakfast, I don’t worry about their vegetable consumption for lunch or even dinner. I still serve them carrots carrots carrots, but if we have a gluten free pizza lunch, then it’s ok too. They’ve had spinach! What more could I ask?
